Mixed Greens Salad with Cherry Tomatoes, Walnuts, and Feta Cheese

Ingredients:

 

1.       2 cups of mixed greens (spinach, arugula, and kale)

2.       1/2 cup of cherry tomatoes

3.       1/2 cup of sliced cucumbers

6.       1/4 cup of crumbled feta cheese

2.       Chop the mixed greens and slice the cherry tomatoes, cucumbers, and carrots.

3.       Add the mixed greens to a large bowl.

4.       Add the sliced cherry tomatoes, cucumbers, and carrots to the bowl.

5.       Add the chopped walnuts, crumbled feta cheese, and dried cranberries to the bowl.

6.       In a small bowl, mix together the extra virgin olive oil, apple cider vinegar, salt, and pepper to make the dressing.

7.       Drizzle the dressing over the salad and toss to combine.
